Barbecued Pulled Pork Beer Tacos

That’s right folks, barbecued pulled pork beer tacos! I know your mouth is watering just thinking about this dish and I’m sure your guest are going to love it. These dishes are best when made in Football Logo Slow Cookers.

Ingredients: Makes about 12 to 15 small tacosPulled pork tacos

1 (3.5 to 4-pound) pork shoulder roast. Bone in or out doesn’t really matter
1 tablespoon onion powder. Use as much or as little as you like to taste
1 tablespoon smoked paprika. Paprika makes a big difference
1 teaspoon garlic powder. If you’re not a garlic fan then ignore it
1/2 teaspoon salt.
1/2 teaspoon pepper. I always use more
12 ounces of beer. I like the stout or some kind of micro brew
32 ounces of barbecue sauce. Probably should get some more because let’s face it you just can have enough
12 small flour or corn tortillas. Corn is the best
6 ounces freshly grated cheddar cheese. I always have more on hand. Peppered jack cheese is awesome too

Here is how I put this dish together

I like to sear the pork roast before I put it in the slow cooker, it helps seal all the delicious moisture in. Heat a large skillet to medium to high heat and add a couple tablespoons of olive oil, then sear all sides of the roast for about 2 to 3 minutes per side. Once that is done drop that baby in the slow cooker and add the onion powder, paprika, salt and pepper, beer and bbq sauce. Cook on medium heat for about 5 hrs and make sure you are flipping the roast every hour or so. Now you need to shred the pork and I like to add just a little more bbq sauce and don’t be afraid to add some extra beer. Turn the slow cooker down and let that yummy mixture marinate for at least 20 minutes, then let your guest enjoy! Heat up the tortillas and let your friends build their own tacos, put out some great extras like cilantro, cheese and lime.

Barbecue Pulled Chicken SlidersPulled chicken sliders

This one is easy but delicious! For a party or tailgating I like to put this on a slider bun and have some awesome toppings on hand for my guests to choose from.

Ingredients: You should get between 8 and 10 sliders

2 ½ pounds of boneless, skinless chicken breasts.
Slider buns. Or rolls
1 8 ounce can of tomato sauce. Any brand will do
1 4 ounce can of chopped green chilies. Don’t be afraid to make this hot
3 tablespoons of cider vinegar
1 tablespoon paprika. I like to use the smoked paprika
2 ½ tablespoons of honey. Thank you bees
½  can of tomato paste. You can use the entire can if you like
2 tablespoons of Worcestershire sauce. Use as much or as little as you like
1 tablespoon of yellow mustard. Try the fancy mustard too
1 chopped onion. Leave it out if your not a fan
1 chopped clove of garlic. This is optional too
Salt and pepper to taste

Here is how simple this really is to put together

Take out a medium size bowl, add and mix together your tomato sauce, green chilies, vinegar, paprika, honey, tomato paste, Worcestershire, mustard, garlic and onion. Salt and pepper your chicken. Put that mixture in the slow cooker and toss in the chicken, put the top on and let this baby cook, on medium heat, for about 5 hrs. When the chicken is done take a couple of forks and shred that chicken. Put the lid back on and let all the juices soak in for about 30 more minutes and it’s ready to serve. It’s fun to have some additional toppings on hand to give your sliders some flare, like cheese or jalapeno.
